Start with 2 tbsp. Canola Oil in your pot. Add 3/4 cup onions and 2 or 3 cloves of garlic. Simmer for 2 minutes. Add mussels and 1/2 bottle of beer. Cover and check in 4 minutes. Add Cilantro and Parsley and squeeze in 1/2 lemon. Tumble with a wooden spoon and cover for 1 more minute or until the mussels open. Eat straight up or with drawn butter.
They are so tender and tasty and easy to make. They pop open in only 4 to 5 minutes. If one does not open don’t eat it. Enjoy.
